I contacted Roland Canada and they are unable to provide the knobs.
Interestingly, they said this in general: "If you bought your NS-2 pedal before June 2021, then those knobs are unfortunately no longer available. There have been a few design changes between the current NS-2’s as to the original ones.".
I suspect that this will apply to many spares - where the designs have changed the parts for the old versions will simply not be available.
I ordered some of these. Not a perfect match, but should look OK and the price is right (I bundled them into a bigger order with my regular supplier).

I suppose they have moved from knurled potentiometer shafts to "D" shafts in general.

New knobs arrived. Not the same as the original Boss knobs, but they look pretty good to my eye.
