SD-2 is also my favorite Boss overdrive since many, many years. I have two of them.....

On the Bossarea forum I remember a discussion, why the older CE-2 soundet better than the later MIT ( IF they do....). The reason for differences, according to someone, was that the internal trim pots had to be carefully adjusted (at the factory!) to sound the best, and that this operation was time ...

I had a FB-2 when it came out, but didn´t like it very much, and sold it. Then I read that they are discontinued and rising in price, and thought that I´ll if I can find one sooner or later, I´ll buy it. For the collection... And finally did, mint condition and box, for about US $ 50. And I gave it ...

I had one for a while and it´s not very good for guitar, possibly because it´s not a very good chorus firstly.
CE-2B is way better, for guitar AND bass, and can be found cheap with a little luck, much lower prices than CE-2. And it´s very easy to mod to CE-2 specifications.

I have an EV-5, and minimum volume set to 0.

No, that's the first thing I tried. I mean, it made sense for me to control the swell with the expression pedal and then turn off te effect, like most Wahs out there anyways. But the footswitch wouldn't do anything.

Tried my PS-6 and it reacts just as yours, it´s not a good idea from Boss....

My new SY-1 reacts the same way, with the recommended Expression pedal. BUT I can manually put to "off" with the foot-switch, was it impossible for you to turn it off at all?
